As Valentine’s Day approaches on Sunday, February 14, people across the globe will once again celebrate what many consider the most confusing holiday ever created. While chocolates and roses have become the norm, it might be time to step away from the sugary traditions and bring back the original spirit of the day — outdoor grilling.
Valentine’s Day actually began as a Christian feast honoring martyrs, including Saint Valentine, around AD 496. There are no records suggesting that anyone was eating heart-shaped candies or gifting expensive flowers back then. Instead, the focus was on cooking hearty meals over an open flame. It wasn’t until the 15th century that the holiday took a turn toward romance and indulgence — and not by grill enthusiasts.
This year, let’s honor the roots of the tradition and bring back the joy of grilling with a special meal. Try this grilled lamb chop recipe paired with rosemary potatoes and a fresh mint sauce — a perfect way to show love through food.
### Garlic & Mint Grilled Lamb Chops
Lamb chops are one of the most tender cuts of meat, and when grilled to perfection, they deliver a rich, flavorful experience. The right seasoning can make all the difference. Garlic and mint pair beautifully with lamb, creating a dish that's both aromatic and satisfying.
**Ingredients for Lamb Chops:**
- 1/3 cup of extra virgin olive oil
- ½ cup chopped fresh mint leaves
- 3 cloves garlic (minced)
- ½ teaspoon black pepper
- Sea salt
- 10 petite rib lamb chops (about 2 pounds)
**Instructions:**
1. Preheat your PGS Grill to medium heat.
2. In a bowl, mix the olive oil, mint, and black pepper.
3. Rub each lamb chop with minced garlic.
4. Brush both sides of the chops with the mint oil.
5. Season with sea salt and place them on the grill.
6. Cook for 3–4 minutes per side, flipping only once.
7. Serve warm, with a light drizzle of mint oil.
### Grilled Rosemary Potatoes
No Valentine’s meal is complete without a side of perfectly cooked potatoes. These rosemary-infused potatoes add a savory, earthy flavor that complements the lamb perfectly.
**Ingredients for Potatoes:**
- 1 pound of potatoes, sliced into 1-inch thick pieces
- 1 yellow onion, diced
- 5 peeled garlic cloves, chopped
- 2 teaspoons crushed rosemary
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1½ tablespoons extra virgin olive oil
- Aluminum foil
**Instructions:**
1. Preheat your grill to medium heat.
2. In a bowl, combine the olive oil, garlic, onion, paprika, salt, and pepper.
3. Add the potatoes and toss to coat evenly.
4. Stir in the rosemary.
5. Wrap the mixture in two layers of aluminum foil, sealing tightly.
6. Place on the grill and cook for 20 minutes.
7. Flip and cook for another 15–20 minutes.
8. Carefully open the foil and serve.
### Mint Sauce for a Sweet Touch
To add a touch of sweetness and a personal flair, try making homemade mint sauce. It’s the perfect finishing touch for your romantic meal.
**Ingredients for Mint Sauce:**
- ¼ cup finely chopped mint leaves
- ¼ cup boiling water
- 1½ tablespoons cider vinegar
- 3 tablespoons sugar
- 1/3 teaspoon sea salt
**Instructions:**
1. In a small bowl, mix the mint leaves and sugar.
2. Pour in the boiling water and stir until the sugar dissolves.
3. Add the remaining ingredients and stir well.
4. Let the sauce steep for 20 minutes.
5. Serve warm with a small spoon.
This Valentine’s Day, why not take a break from the usual sweets and create something truly memorable? A homemade meal of grilled lamb, rosemary potatoes, and mint sauce is a delicious way to reconnect and rediscover the romance of outdoor grilling.
Don’t forget to set the mood with a beautiful table setting, some fresh flowers, and a heartfelt message. Your partner will surely appreciate the effort and the taste!
